About Us
Just Cut is an enterprise of the Center for an Agricultural Economy based in Hardwick. At the Vermont Food Venture Center, Just Cut operates a processed vegetable line, using industrial kitchens and semi-automated processing equipment to make a variety of minimally processed vegetable products perfect for institutional food service needs. Concentrating on crops that grow well in Vermont and our region, the Just Cut team offers fresh-cut, locally-grown products.
Practices
The Just Cut team works with small and mid-scale farmers and aims to keep the food miles traveled as low as possible for these made-to-order products. Their unique business model connects the abundant yields of Vermont farms to food buyers of any scale, reducing food waste and expanding local food offerings. Additionally, the Center for an Agricultural Economy, where Just Cut operates, will eventually be a net-zero building.
