Just Cut is an enterprise of the Center for an Agricultural Economy based in Hardwick. At the Vermont Food Venture Center, Just Cut operates a processed vegetable line, using industrial kitchens and semi-automated processing equipment to make a variety of minimally processed vegetable products perfect for institutional food service needs. Concentrating on crops that grow well in Vermont and our region, the Just Cut team offers fresh-cut, locally-grown products. They work with small and mid-scale farmers and aim to keep the food miles traveled as low as possible for these made-to-order products.
